Black Bean Mango Salsa

Ingredients

  • 3 tomatoes, chopped
  • 1/2 medium onion, diced
  • 1 mango, cubed
  • 2 Tablespoons cilantro, chopped
  • 2 cup black beans, drained and risnsed
  • Salt, to taste
  • Lemon juice, to taste

Instructions

  • Wash hands with soap and water for 20 seconds.
  • Gently rub tomatoes, onion, and mango under cold running water. Rince the cilantro under cold running water.
  • Prepare vegetables and beans as directed in ingredients.
  • Mix all ingredients in a bowl. Toss well to blend. Chill before serving.

Enjoy with vegetables, whole grain chips or whole wheat crackers.
