Ingredients

tomatoes, chopped

onion, diced

mango, cubed

Tablespoons
cilantro, chopped

cup
black beans, drained and risnsed
Salt, to taste
Lemon juice, to taste
Instructions
Wash hands with soap and water for 20 seconds.
Gently rub tomatoes, onion, and mango under cold running water. Rince the cilantro under cold running water.
Prepare vegetables and beans as directed in ingredients.
Mix all ingredients in a bowl. Toss well to blend. Chill before serving.
Enjoy with vegetables, whole grain chips or whole wheat crackers.
