Veggie Packed Guacamole

Add fresh chopped vegetables to avocados for a chunky salsa-like guacamole.

Ingredients

  • 2 avocados
  • 1 lemon juiced
  • 2 Tablespoons cilantro
  • 1 small tomato chopped
  • 1 jalapeño pepper chopped
  • 1/2 cup green pepper chopped
  • 1 small white onion chopped
  • Salt and pepper to taste

Instructions

  • Wash hands with soap and water for 20 seconds.
  • Wash the produce under cold running water.
  • Juice the lemon; set aside.
  • Chop the cilantro, tomato, pepper,s and onion; set aside.
  • Mash the avocado and lemon juice with a fork until creamy.
  • Add the chopped cilantro, tomato, peppers, and onion to the avocado mash.
  • Mix well and season with salt and pepper to taste.
  • Allow to chill for 1 hour before serving so the flavors mix.
