Cowboy Caviar

This colorful and tangy recipe is a great side for any gathering.

Servings: 20

Ingredients

  • 1 (15-ounces) can corn drained and rinsed
  • 1 (15-ounces) can black beans drained and rinsed
  • 1 (15-ounces) can garbanzo beans drained and rinsed
  • 2 large tomatoes diced
  • 1/4 cup cilantro diced
  • 1/2 cup onion diced
  • 1 green bell pepper diced
  • 1/2 cup fat-free Italian dressing

Instructions

  • Wash hands with soap and water for 20 seconds.
  • Drain and rinse canned ingredients.
  • Gently rub tomatoes, onion, and pepper under cold running water. Rinse cilantro under cold running water. Dice all vegetables,
  • Mix all ingredients together in a large bowl.
  • Serve with whole-grain chips, tortillas, or crackers.
