Au Gratin Vegetables

This flavorful vegetable side dish is made with CNP Magic Mix Cheese Sauce.
Servings: 2 cups

Ingredients

  • 1/2 cup CNP Magic Mix
  • 1 cup water or low-sodium broth
  • 1 cup shredded low-fat mozzarella cheese
  • 2 cups vegetables broccoli, carrots, corn, cauliflower, chard, potatoes, spinach, turnips, etc.
  • 1/2 cup crushed cereal or bread crumbs
  • Nonstick spray

Instructions

  • Preheat oven to 325°F.
  • Spray an 8x8-inch baking pan with nonstick spray.
  • Steam or sauté vegetables until crisp tender.
  • Combine CNP Magic Mix and water or broth in a saucepan. Stir over medium heat until smooth and thick.
  • Add cheese and stir until just melted.
  • Add cooked vegetables to cheese sauce. Stir well.
  • Place in a 8x8-inch baking pan. Sprinkle with crushed cereal or bread crumbs.
  • Bake at 325°F for 15 minutes, or until heated through.
