Cowboy Caviar

- 2 cups fresh or frozen corn or 1 15-ounce can corn, rinsed and drained
- 1 15-ounce can black beans, rinsed and drained
- 1 15-ounce can garbanzo, pinto, white, or other beans, rinsed and drained
- 2 Roma tomatoes diced
- 1/4 cup cilantro chopped
- 1/2 cup onion finely chopped
- 1 green bell pepper diced
- 1-2 jalapenos seeded and minced (optional)
- 1/2 cup fat-free Italian dressing
- Whole-grain chips or crackers
Rinse and drain the canned ingredients.
Cut up the vegetables.
Mix all ingredients together in a large bowl.
Serve with whole-grain chips or crackers.
