Chocolate Banana Spelt Cake

- 3 large bananas
- 1/2 cup brown sugar packed, plus 2 Tablespoons
- 1/2 cup applesauce, unsweetened
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups whole spelt flour
- 1/2 cup cocoa powder, unsweetened
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips, semi-sweet
- 2 Tablespoons mini chocolate chips, semi-sweet
Wash hands with soap and water for 20 seconds.
Preheat oven to 365°F.
With hand mixer mix bananas and brown sugar until sugar is dissolved.
Add applesauce, vanilla, and egg. Mix together.
In a separate bowl, whisk flour, cocoa powder, baking soda, and salt. Add to banana mixture.
Fold in chocolate chips. Pour batter into a greased 8x8 baking dish. Sprinkle top with mini chocolate chips.
Bake cake for 35 minutes. Check center with a toothpick to determine doneness. Best eaten warm.
