Chocolate Banana Spelt Cake

Ingredients

  • 3 large bananas
  • 1/2 cup brown sugar packed, plus 2 Tablespoons
  • 1/2 cup applesauce, unsweetened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups whole spelt flour
  • 1/2 cup cocoa powder, unsweetened
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips, semi-sweet
  • 2 Tablespoons mini chocolate chips, semi-sweet

Instructions

  • Wash hands with soap and water for 20 seconds.
  • Preheat oven to 365°F.
  • With hand mixer mix bananas and brown sugar until sugar is dissolved.
  • Add applesauce, vanilla, and egg. Mix together.
  • In a separate bowl, whisk flour, cocoa powder, baking soda, and salt. Add to banana mixture.
  • Fold in chocolate chips. Pour batter into a greased 8x8 baking dish. Sprinkle top with mini chocolate chips.
  • Bake cake for 35 minutes. Check center with a toothpick to determine doneness. Best eaten warm.
