Cowboy Caviar
This colorful and tangy recipe is a great side for any gathering.

- 1 (15-ounces) can corn drained and rinsed
- 1 (15-ounces) can black beans drained and rinsed
- 1 (15-ounces) can garbanzo beans drained and rinsed
- 2 large tomatoes diced
- 1/4 cup cilantro diced
- 1/2 cup onion diced
- 1 green bell pepper diced
- 1/2 cup fat-free Italian dressing
Wash hands with soap and water for 20 seconds.
Drain and rinse canned ingredients.
Gently rub tomatoes, onion, and pepper under cold running water. Rinse cilantro under cold running water. Dice all vegetables,
Mix all ingredients together in a large bowl.
Serve with whole-grain chips, tortillas, or crackers.
