Wash hands with soap and water for 20 seconds.
Cook grain: Place grain, water, and salt in a medium saucepan over high heat. Bring to boil, then turn heat to low, cover, and simmer for 60 minutes. Drain excess water. Cool for 10-15 minutes.
While grain is cooking chop shallots, basil, and mozzarella.
Place cooked grain in a large bowl and add oil and vinegar, stir to mix well. Add chopped shallot, tomatoes, basil, mozzarella, salt, and pepper and stir to combine ingredients.
Salad can be served at room temperature or served cold.
