You might not use all of the filling. Set the springform pan in the center of the roasting pan. Carefully pour the boiling water into the roasting pan around the springform pan, taking care not to get any on the filling. Check the cheesecake after 1 hour, to see if it is getting too brown or overcooked. To prevent more browning, place a layer of foil over the top of the cake. The internal temperature of the center should read 145\u00b0F with an instant-read thermometer.
